Mushroom Bourbon Fried Chicken

mushroom bourbon fried chicken recipe easy

One of my favorite foods is mushrooms; and one my kids favorite foods is fried chicken. Put them together, and you have happy kids, and a happy mommy. Love!

This dish tastes delicious and isn’t very complicated. It will impress your family! Wanna know the secret? It’s actually super easy to make! Especially if you cheat and buy the fried chicken pre-cooked. Safeway has pre-cooked fried chicken strips in their deli section, and they are delicious. That’s my secret!

Mushroom Bourbon Fried Chicken recipe:

  • 8 pieces of fried chicken
  • 11 oz. (or 2 cans) sliced mushrooms
  • 3 pats of butter
  • 2 tablespoons olive oil (extra virgin)
  • 1/3 cup chopped onions (green or white-your choice-I use white)
  • 1/3 cup bourbon
  • 1 cup heavy cream

Heat all together in a large skillet, occasionally turning the fried chicken over to soak up the sauce on both sides. Ensure the butter melts and mixes well into the mixture. Cook 20 minutes. Serve with chopped vegetables.

Things you may need to cook Mushroom Bourbon Fried Chicken at home:

When I photographed my Mushroom Bourbon Fried Chicken, I served it with corn casserole. The corn casserole did not come out very good, and tasted like a breakfast food. I recommend serving this dish with your favorite vegetables instead. It is very heavy, and vegetables will balance out your plate. Serving Mushroom Bourbon Fried Chicken with a heavy side dish will be too much to digest. That’s why a simple vegetable such as slice carrots or zucchini, makes the perfect side dish.

I hope you enjoy my Mushroom Bourbon Fried Chicken recipe! The alcohol cooks out, so this dish is safe to serve to your kids, as well anyone who doesn’t drink alcohol. No-one will get a buzz 😉

Mozzarella Rice Torte recipe

mozzarella rice torte recipe

This Mozzarella Rice Torte is a backyard BBQ recipe I grew up with. A rice torte is a great side dish to bring to someone’s house for a summer BBQ, a Friendsgiving, Thanksgiving, or any holiday party. In addition to a side dish for a party, it’s a great main course when served with fruit and vegetables.

My Mozzarella Rice Torte is really easy to make. Here is what you need:

Ingredients:

  • 3 cups cooked rice
  • 4 eggs-beaten and mixed well
  • 1 cup Parmesan
  • 1 tablespoons nutmeg
  • 1 teaspoon salt
  • 1 tablespoon ground black pepper
  • 2 pats of butter
  • 2 tablespoons olive oil (extra virgin is best)
  • ¼ cup tablespoons chopped onion
  • 1 tablespoon thyme
  • 2 tablespoons basil
  • 1 package of shredded mozzarella

Mix together, then add rice and mix well.

Pre-heat oven 350.

  1. Layer one half of rice mixture, and smooth out with a spoon
  2. Layer all of the mozzarella on top of the rice
  3. Layer the second half of the rice mixtures, and smooth out with a spoon.
  1. Bake covered for 45 minutes at 350.
  2. Bake uncovered an additional 5 minutes at 350.
  3. Let the torte cool for an hour before slicing into cubes.
  4. Serve at room temperature.

Voila! You have a delicious side dish everyone will enjoy!

Fast and easy Pasta Alfredo with bacon

fast easy pasta alfredo

From left: Italian soda (recipe in this post) / white dish (similar here) / recipe below- /

Are you pressed for time? Or are you like me, and still sheltering-in-place due to local regulations? Either way, you might be trying to put meals together with what you have sitting in your pantry, versus fresh food you just picked up from the market this morning. If you are looking for something you can make from your pantry, which happens to be fast and easy, this is the pasta recipe for you!

This is super easy, and requires absolutely zero cooking skills. Love that! Here is what you need to make this delicious pasta dish:

Ingredients for my fast and easy Pasta Alfredo with bacon:

  1. 1 lb spinach pasta.
  2. 1 jar of Alfredo Sauce (that’s right, a jar! Super easy right? I prefer Rao’s Alfredo)
  3. Bacon bits (you can keep a Costco size package in your refrigerator for months-great pantry staple!)
  4. 1/3 of a bag of frozen peas (everyone has this in their freezer right?)
  5. Parmesan cheese

OK, I am sure you can tell from the ingredients, this is super easy. No chopping involved! First, you want to cook the pasta and the frozen peas. Once they are done cooking, drain and return them to the pot. Easy!

Then, you will add the Alfredo Sauce from the jar, and warm it up while mixing it in with the pasta and peas.

Once cooked, place your desired serving size on a plate, and then sprinkle the bacon bits on top. So easy!

Lastly, let everyone put the Parmesan cheese on top of their own serving to taste.

Bon Appetit! You may eat!

Wasn’t that the easiest recipe you have seen on the Internet? It’s really simple, and uses pantry staples most of us have on hand. Plus, it feels fancy, not sure why-but it does! My kids and my husband really enjoy this dish. I hope you love it too!
